Victoria Sponge with fresh cream

A classic beautiful light, buttery sponge filled with home made raspberry jam and fresh cream (or for buttercream, see Cakes and Treats) and finished with a dusting of icing sugar. There’s a reason why it’s stood the test of time.

This is a large cake and serves 12 generous slices or 16 smaller ones.
